Baking with Dad: Gingerbread Recipe

I'm very excited to post a recipe where I'm not just cooking with my Daddy but I'm baking with him! Cooking and baking is a new found love for my Dad. Over the last year he's really found a passion for all things culinary, and I'm very proud of him. Although my poor mother, who is an amazing cook and baker I might add, never gets a foot in the kitchen anymore, bless her.

The last time I was home, I thought it would be fun to film one of his favourite recipes, gingerbread. It's a very simple (but delicious) recipe which he was given by a close friend, which not only uses ground ginger, but also crystallised stem ginger adding a great texture and flavour to the cake. What I love about this recipe is that you can add other little extras to it. If you like your cake really gingery, just add some more ground ginger, if you want more crunch, you could add some walnuts like we did. Or why not add chopped dates or raisins to it for a slightly sweeter gingerbread.

I've been told in good confidence (from my Father) that it's a winner with the ladies at the local church, however, I think that might be a combination of an excellent cake and his charm.
